Looking for an easy, last minute recipe idea before Thanksgiving? Jacqueline, a Kurdish refugee from Syria, shared her recipe for vegan Mahshi — vegetables stuffed with rice.

She lost her parents when she was young, so Jacqueline taught herself to make Mahshi — a dish made with stuffed vegetables and rice. She shares how special this dish is to her:
 
    "This recipe is for special guests when you want to spoil them and show hospitality. For us Kurds, the longer a dish takes to be ready, the more you show to your guests you appreciate them."
