Hi John,
Looking for an easy, last minute recipe idea before Thanksgiving? Jacqueline, a Kurdish refugee from Syria, shared her recipe for vegan Mahshi — vegetables stuffed with rice. |
|
Cooking for others brings her happiness and builds a sense of community within her refugee camp.
She lost her parents when she was young, so Jacqueline taught herself to make Mahshi — a dish made with stuffed vegetables and rice. She shares how special this dish is to her:

"This recipe is for special guests when you want to spoil them and show hospitality. For us Kurds, the longer a dish takes to be ready, the more you show to your guests you appreciate them." |
Jacqueline's Mahshi recipe can serve up to six people and includes fresh vegetables and some key staples of Syrian cuisine like mint and olive oil. If you want to make this delicious (and vegan!) Syrian meal, check out Jacqueline's Mahshi recipe here »
Your support directly helps refugees, like Jacqueline, who are trying to rebuild their lives. We hope you enjoy this recipe and piece of Syrian culture!
Bon Appetit!
