Koteu has been supported by the IRC's mental health center in Greece for the past year. She attended IRC cooking workshops held at Nan, a restaurant on the island of Lesbos, alongside other refugee women and local community members.
"Food has always brought people together," says IRC's Senior Advocacy Manager Martha Roussou, who helped to organize the cooking workshops. "The spices, the smells and the memories that cooking brings create bonds. Cooking is intimate."
Koteu chose this Spinach and Tuna with African Fufu recipe because she ate it often growing up in Cameroon. >>
Fufu is a dough made from boiled plantains, cassava or malanga — but for this recipe, Koteu used semolina. You can also sauté some shrimp and add it on the top of the dish.
