Where I’m from, the Rio Grande Valley, we’re very family-oriented — and we
like to eat a lot!

In our household, conversations are always accompanied by some sweet
bread, some coffee, or a huge meal. Cooking has always been our favorite
way to connect with family and show our love, and it’s a tradition I still
carry with me.

But these days, with the campaign ramping up and my schedule being
jam-packed, I hardly have time to make a delicious, home-cooked meal for
my family anymore.

But when I do manage to get into the kitchen, I always make a dish that’s
a true South Texas staple passed down through my family — calabaza con
pollo (chicken and squash).

It’s a hearty, comforting Mexican dish, and the best part is that you can
make this a single serving or feed a crowd.

I wanted to do something special today to share a piece of my home with
