Red or green?
When it comes to choosing your favorite color of New Mexico chile, it can
be a tough call! But I’ll be the first to share my deep love of cooking
traditional recipes using New Mexico green chile.
Back when I was in Law School at UNM, I’d prepare huge pots of green chile
stew to bring to student gatherings. I made that same green chile recipe
for my Congressional colleagues during the 2019 winter holiday season. I
even cooked chile and tortillas for the water protectors when I traveled
to Standing Rock during the protests against the Dakota Access Pipeline.

When I lived in Washington and found myself missing home, I’d cook a pot of
green chile stew.
To me, New Mexico green chile tastes like home — and one of my favorite
ways to cook with it during the summer months is to make a refreshing
green chile salsa!
