Fresh Squid You will receive a whole squid that will require some processing. This can be very therapeutic and one of my 6-year-old's favorite things to help with in the kitchen. Watch our video here to learn how!
Calamari cooks quickly, making it perfect for a calamari salad, stir fry, or lightly breaded and fried. The "tubes" can also be stuffed and gently baked in a tomato sauce. Whatever you choose, you're in for a treat this week. The best part? Fresh Halibut This week, we also have beautiful fresh Halibutbeing caught right now in the Monterey Bay by fisherman Josh Loya. High-quality, firm-textured, and mildly flavored, this fish will sing in whatever recipe you have up your sleeve. Grill it and pair with whatever vegetables and herbs you have in abundance, have it raw in a ceviche (it's delicious!), or bake it with white wine and capers - it is a delight that will please all the tastebuds around your table. Check out the baked halibut recipe with lemon and dill for inspiration!
Smoked Black Cod Fisherman Stan Bruno calls this smoked black cod "candy" - one taste and you'll know why! If you don't eat it all when you first open the package, you can enjoy it with crackers and a little cream cheese or add it to a bagel with eggs in the morning. Perfectly smoked in small batches, this won a national Good Food award!

Grilled Squid With Garlic, Chili & Parsley
Ingredients:
4 squid tubes are very, very fresh
3-4 tablespoons olive oil, extra-virgin
Sea salt
3 large cloves of garlic, finely chopped
1/2 long red chili diced
A handful of parsley chopped
Juice of 1/4 lemon
Instructions:
Using a sharp knife, score the tops of the squid tubes in a few places and cut away the tentacle pieces. Using a paper towel, pat dry the squid really well to remove any surface moisture. This will help to cook the squid faster and prevent it from becoming chewy. Set aside and prepare the aromatics.
Heat a tablespoon of olive oil in a large frying pan over high heat. Once hot (this is important), add the squid and cook for 2 minutes on each side. Remove from the pan and sprinkle with sea salt.
Add 2-3 more tablespoons of olive oil to the pan. Reduce the heat slightly.
Add the garlic, chilli, and most of the parsley to the pan and sauté in olive oil for a minute until the garlic is golden brown. Add the squid pieces back in and stir through. Cook together for 20-30 more seconds and drizzle with a little lemon juice (about 1/4 of a lemon).
Serve on a plate with all of the garlic and parsley oil topped over top.

SHIPPING:Enjoy free shipping on any orders over $100. For any orders less than $100, there will be a $35 shipping charge added to the final total. Delivery is available nationwide but any locations outside of CA, NV, UT, AZ, WA, OR, or ID will be subject to an additional shipping fee.
