Petrale sole is a flatfish, like halibut and flounder, known for its delicate texture and mild, sweet flavor. They cook quickly and love a good sear, fresh herbs, and capers. It is best cooked gently in the oven, poached, steamed, or over a medium flame in a non-stick pan for solemeunière. The thin fillets can also be sautéed, then mixed with breadcrumbs, flour, herbs, and baked for Petrale Sole Croquettes.
