Red Uni
Rich and generous, your Red Uni this week offers a bold balance of ocean flavor and umami depth. What makes it even more special? Dedicated divers like Tom Trumper, his family, and their team in Fort Bragg are part of a larger collaboration between government, NGOs, and industry, all working to ensure these ecosystems thrive. By choosing red urchin, you're not just elevating your plate — you're supporting the future of our coastal waters.

Chef Kevin's Uni Carbonara

Ingredients:

1 med onion, diced
3 garlic cloves, crushed and diced
2 oz bacon or prosciutto, julienne sliced
1 egg yolk
¼ cup cream
¼ cup parmesan cheese
3-5 pieces of uni
1/2 cup peas
½ pound pasta, linguini or spaghetti
Fresh parsley

Steps:
1. Start cooking pasta. While pasta is cooking, start on the sauce. Reserve ¼ cup cooking liquid to thin sauce, if needed.
2. Cook bacon and remove fat.
3. Add onion and sauté 5 min till soft.
4. Add garlic and sauté 2 min.
5. Pour in cream and bring to boil.
6. Reduce heat and whisk in half of the parmesan cheese.
7. Whisk in uni and egg yolk.
8. Add peas
9. Fold in the pasta. Salt and pepper to taste.

Serve with the rest of the parmesan and fresh parsley.

How It Works:

ORDERS: Use the Real Good Fish website to view featured items in the flash sale for this week and place your order. The sale closes at 10 am PST on Friday morning. If you are outside of the Western states, please contact us, and we can upgrade the shipping to overnight for an additional fee, or send the product to arrive after the weekend.

DELIVERY: All deliveries will be sent to the address you choose in checkout. This can be the address you use for your general Real Good Fish deliveries or an alternative shipping address. Deliveries will be made on Friday or Saturday to your door, depending when the order is placed.

SHIPPING: Enjoy free shipping on any orders over $100. For any orders less than $100, there will be a $35 shipping charge added to the final total. Delivery is available nationwide but any locations outside of CA, NV, UT, AZ, WA, OR, or ID will be subject to an additional shipping fee.
