Copi® to be featured during National Restaurant Association Show in Chicago
SPRINGFIELD – Copi®, the consumer brand for invasive carp launched in 2022 by the Illinois Department of Natural Resources (IDNR), will be featured during the National Restaurant Association Show this weekend in Chicago.
The
National Restaurant Association Show is a must-attend event for people in the restaurant and foodservice industry. As the world’s most influential showcase of foodservice innovation and inspiration, it’s where every trend, solution and category are represented to connect people and products.
Show visitors can find Copi® at the following locations:
Booth 11100: AFusion Chicago and River Fish King will be present throughout the show at McCormick Place promoting Copi®.
The Well event: On Monday, May 19,
The Well Network will host a
reception and panel on Growing and Scaling Brands in Foodservice. During the event, award-winning Chicago chef Maurice Jackson from Bar19 in Wrigleyville will offer a tasting menu featuring Copi® items:
- Magic Copi® Chili in mini bowls with tricolor tomatoes, onions, sour cream and tortilla strips
- Copi® Croquettes with avocado mousse, mango pico and micro greens
- Copi® Smash Joe Sliders with vegan mayo, pickles, barbecue sauce, swiss cheese and micro greens
IDNR has led the rebranding of invasive carp to combat public misconceptions about the fish and increase consumer interest in this healthful, delicious, top-feeding protein source – all with the intent of helping a new industry become established. The Copi® brand launched in June 2022, generating regional, national, and international attention. Illinois processors have reported significant increases in sales since the launch, and nationwide online sales are now available.
Copi® are mild, clean-tasting fish with heart-healthy omega-3s and are high in protein. Increased consumption will help to prevent them from decimating native fish populations in the Great Lakes and restore an ecological balance to waterways downstream. For more information, visit the
