I just finished reading your excellent March/April/May cover article
“Building a better bite”
by Karen E. Lange. I agree that
getting people to shift from animal-based to plant-based foods requires the
availability and promotion of plant-based foods that resemble what people
already like to eat. I’ve never believed we should reject animal-free
foods that resemble animal products. Moving people from the familiar to the
unfamiliar involves making the unfamiliar as “familiar” as
possible. This is the psychology of transition, of the progress we’re
seeing toward plant-based food choices. Thank you for the inspiration!
