How to cook + enjoy California Spiny Lobster
Spiny lobsters are prized for their sweet, buttery tail meat, which accounts for a third of their total weight. Lobsters will be delivered to you lightly steamed. Lobsters are caught to order and steamed just before shipping. Lobsters will range between 1-2lbs and you can expect a 30-35% yield of tail meat. Picked meat or whole lobsters can also be frozen if you'd like them for a future meal.
