As summer comes to a close and we officially enter autumn, I found myself reminiscing about a trip I took to Spain many years ago. The scorching Andalusian sun, the vibrant streets, and most importantly, the food – it all came flooding back to me.
You know what stood out the most? The gazpacho!
Not the lumpy kind you typically find with lots of vegetables, but a simple, smooth, pure tomato and olive oil one. It was love at first sip, and has become one of my favorite soups to make — especially when there are fresh, ripe, homegrown tomatoes I can throw in the mix!
