Dulse Seaweed


Fresh Dulse is a highly nutritious seaweed that is rich in protein and packed with essential ocean nutrients.

Recipe: Vegetable and Seaweed Soup

Seaweed is a nutritional powerhouse! It's low in calories and packed with essential minerals like calcium, iodine, and iron. Rich in vitamins A, B, C, and trace amounts of B12, its benefits extend to regulating hormones, boosting metabolism, and enhancing skin health. And best of all, it tastes delicious!


Ingredients:

  • 1 bunch green onions thinly sliced


  • 3 small carrots scrubbed and thinly sliced, wash and set aside the carrot tops


  • 1-2 cloves of fresh garlic smashed and diced


  • 2-3 red or breakfast radishes


  • 2 small purple potatoes


  • ½ bunch asparagus ends trimmed and cut on the bias


  • 1 Tbsp crushed dried OR 1/4 cup fresh shiitake mushrooms


  • 1/3 cup of dulse, cut into tiny pieces using a clean pair of scissors



Preparation:


  • Wash and prep all the vegetables (except dulse and mushrooms if using dried) into a soup pot and sauté in 1 TBSP olive oil.


  • Stir frequently until tender. Add dried mushrooms if using.


  • Add in the dulse.


  • Stir around and then add 4 cups of water. Bring to a boil and then lower to a simmer. Cook for 15-20 minutes on a medium to low flame and then remove from heat.


  • Taste and add salt if needed. Serve immediately, top with chopped carrot greens and a dollop of sour cream or greek yogurt.
