Happy Passover, John!

Passover has always been one of my favorite holidays. It is a time for family and friends to come together and enjoy our common heritage, say the ancient words of the seder that countless generations have said before, and celebrate our freedom.

But it's not just the chance to be together that makes Passover special — it's the food, too. From the symbolic foods of the seder like matzah and horseradish to the traditional dishes like brisket and matzah ball soup to modern interpretations of classic recipes, Passover meals represent a celebration of our shared heritage and culture.

As we approach Passover in the coming week, whether you are Jewish or not, I want to offer a token of appreciation for all you’ve done to support both me and this campaign — through making donations, volunteering, or even taking the time to read one of my emails. So here I am sharing one of my favorite Passover recipes with you, a delicious chocolate cake that can be put together and cooked (in the microwave!) in about 20 minutes, start to finish. I hope you'll enjoy making it and sharing it with your loved ones as much as I do! If you don’t celebrate Passover, you can replace the matzah cake flour with regular cake flour for equally tasty results!

Nancy’s Super Quick Passover Chocolate Cake:

This is the recipe to make when you have no time to add a dessert to your Passover repertoire, and want something easy and tasty to serve to your guests. Serve with fresh whipped cream and raspberries, or just on its own!

10 T unsalted butter + 1 T for greasing
8 oz high-quality semisweet chocolate
½ c dark brown sugar
1 t vanilla extract
3/8 c milk
3 eggs, stirred
(½ t baking powder – optional*)
1/3 c matzah cake flour

Grease a 4-6 cup microwavable bowl (Corningware works well) generously with 1 T butter. Cut remaining butter and semisweet chocolate into pieces and add to the greased bowl.

Microwave for 1 min, then stir, then continue microwaving in 30-sec increments, stirring well after each, until chocolate is just melted, and butter and chocolate are fully combined. Add brown sugar and mix.

If the mixture is very warm to touch, allow to cool until near room temperature. Once cool, add vanilla extract, milk, eggs, (baking powder if including), and matza cake flour, and stir until mixed.

Cover bowl with plastic wrap and microwave 5-6 min, until the cake is set.++ Cut a slit in the plastic with a sharp knife, cover with a heavy plate, and let rest for 10 minutes. Serve warm, with freshly whipped cream and raspberries (optional, but highly recommended!).

*If your observance of Passover includes using chemical leavening agents, feel free to include baking powder for a slightly lighter texture.

++Batter may be refrigerated for up to 8 hours before microwaving. If the batter is cold, microwave for an extra 60-90 sec, until the cake is just set.

Over the past several years, for me, that has meant working to restore the integrity of our political system at the local level here on Long Island, by building an organization of moms and students to fight back against the MAGA extremists attacking our public schools.

Now, I’m ready to take that fight against extremism to Congress where I’ll continue working for this community.
