An Efficient, Low-Power Cooking Method

When I was living in Europe, I was baffled by the stoves there. Flat,
glossy surfaces that gleamed with touch screens in another language -
figuring out how to use them was tricky.

Initially, I despised the one in my kitchen in Greece, but that was
because I had purchased the wrong kind of cookware for it. I'd just
picked up something inexpensive that didn't play nicely with the
mechanics of the stovetop. Once a friend pointed out what I needed, I
was hooked. I immediately saw why Europeans were all using these
induction cooktops. They worked faster than any stove I'd ever used in
my entire life to reach the right temperature and maintained a
temperature well, also. In an area where electricity prices had
skyrocketed, these little cooktops just made sense.

Today, Jose talks about why he likes induction cooktops down in the
