In these uncertain times, I wanted to share yet another example of resilience from our immigrant community. Zaid is an entrepreneur and plant-based chef in Kansas City, Missouri. Originally from Mexico, Zaid is now a DACA beneficiary and reminds us why our #HomeIsHere.

Zaid is one of the 27 DACA recipients who have fearlessly shared their stories for our amicus brief that was heard by the Supreme Court in November of last year.

As we inch closer to a final decision on DACA, it’s important to remember how our creativity and resilience has helped us make it through and thrive!

Through-out Zaid’s upbringing, he saw customers from his mother’s bodega be targeted and deported. In his adulthood, Zaid developed a passion for cooking and opened up his own vegan restaurant, with the purpose of being inclusive to everyone in his neighborhood - even low income folks who are often not able to enjoy vegan and healthy food.

The resilience in immigrant communities to live our best lives is what drives Zaid and reminds us all that we’re not alone. With or without DACA, he’s going to continue his dream of making healthy meals for his community and making the world a better place for the next generation.
