Dear John,
Last night was the first night of Chanukah, and today, I wanted to send you a note and my personal recipe for latkes. Wishing you a joyous Chanukah and happy holidays filled with warmth, light, and delightful moments shared with loved ones.
In the spirit of celebration, here is a simple latke recipe for you and yours to try. These crispy potato pancakes are a delightful treat that can be enjoyed with family and friends:
You will need:
1 large egg, well beaten
2 Tablespoons milk
2 Tablespoons flour
¼ teaspoon baking powder
1 ½ teaspoons salt
3 large potatoes, peeled
1 large onion, peeled
Peanut oil or other vegetable oil for frying
Instructions:
Mix egg, milk, flour, baking powder, and salt, and set aside. Grate potatoes and onion. (Pro tip: If hand grating, trim off only one end of the onion, and use the other end as a handle while grating, then discard.) Drain any excess water from potatoes and onions, then combine with other ingredients and stir to mix well. Fill a large pan with oil to ~¼” depth and heat to frying temperature (a piece of grated potato should sizzle), then use a slotted spoon to add batter into the oil, using ~2 Tb per pancake. Cook in batches, flipping each pancake when the bottom is golden brown, to cook the other side. When cooked, remove to drain on a cookie sheet lined with paper towels. Latkes can be reheated in the oven at 300°. Serve with applesauce and sour cream.
