Hi there John – With Thanksgiving coming up, we wanted to highlight this fabulous recipe that we’ve added our own twist to.
Colorado Green Chili with a turkey twist!
Colorado Green Chili, or Chile Verde, a favorite of many in our state, is a heart-warming soup with a delicious balance of citrus and spice. The original recipe calls for Pork shoulder, but we’ve substituted it with turkey to keep your Thanksgiving cooking easy or to make use of your leftovers. |

Ingredients you’ll need:
5 medium-sized Pueblo Chiles ¼ cup vegetable oil or lard 2 pounds of turkey, cut into roughly 1-inch chunks
Kosher salt and freshly ground black pepper 1 teaspoon whole cumin seeds 1 medium yellow onion, diced
½ cup finely chopped cilantro 6 cloves of garlic 1 tablespoon all-purpose flour 16 ounces of crushed tomatillos
4 cups chicken stock Fresh tortillas, chips, or lime wedges, for serving
Directions: - Preheat oven to 400 degrees Fahrenheit.
- Coat the Pueblo chiles in 1 tablespoon of oil and roast until the skin blisters and pepper softens.

Remove the chiles from heat and allow to cool.
- Once cooled, stem and seed the chiles leaving the skin on, then chop.
- Heat the remaining oil in a large pot over medium to high heat.
- Add the turkey and season with salt and pepper.

Add cumin and cook until the turkey is golden brown.
- Remove turkey from pan, and set aside.
- Lower the heat to medium, then add chiles, onions, cilantro, and garlic to the pot.
- Add salt and pepper to flavor.

Saute vegetables until onions are soft and golden.
- Stir in flour and cook until it is equally distributed and absorbs excess liquid.
- Return the turkey to the pot along with the tomatillos and chicken stock.

Bring to a boil, reduce heat, and cover with a lid. Allow to simmer for about 45 minutes.
- Uncover and allow to simmer until liquid is reduced and flavors concentrate, about 15 more minutes.
- Serve with tortilla chips and lime wedges.
