How to cook + enjoy California Spiny Lobster
Spiny lobsters are prized for their sweet, buttery tail meat, which accounts for a third of their total weight. Lobsters will be delivered to you lightly steamed. They are extremely versatile and can be used in just about every way a New England lobster can. Cut the shell open or "butterfly" the lobster or tails before cooking for the best presentation and to maximize flavorings.
Here are a few of our favorite ways to enjoy this special treat:
* Broil the tails with melted butter and lemon wedges. Sprinkle paprika for a little extra depth.
* Bake or Roast with white wine, garlic and herbs
* Grill with herbed oil, served as a half of a whole lobster ([link removed])
* Braised in an Italian garlic, tomato, wine "crazy water" ([link removed])
* Pick the meat for Lobster Rolls, Fritters or omelettes
Just remember to skip the step of boiling in these linked recipes, as we've already done this step for you!
Lobsters are caught to order and steamed just before shipping. Lobsters will range between 1-2lbs and you can expect a 30-35% yield of tail meat. Picked meat or whole lobsters can also be frozen if you'd like them for a future meal.
